Veggie Stir Fry


  • 1 medium onion, sliced
  • 1 yellow pepper, sliced
  • 1 red pepper, sliced
  • 1 cup broccoli, chopped
  • 2 cups kale, chopped
  • coconut oil
  • sesame oil
  • soy sauce


Step 1 – In a wok or large pan heat 1 tbsp coconut oil.

Step 2 – Add all veggies except for kale and cook until tender but still has a little crunch

Step 3 – Add 1 tbsp sesame oil and 1-2 tbsp soy sauce and mix well.

Step 4 – Add kale and mix well until the kale becomes soft.

Step 5 – Serve on rice, quinoa or pasta.
