Sugar Free Banana Chocolate Chip Muffins
Ingredients
2 cups Whole Wheat Flour
1/2 cup Ground Flax seed
1 tablespoon Aluminum Free Baking Powder
1 teaspoon Aluminum Free Baking Soda
1-2 teaspoon Ground Cinnamon
1/3 cup Extra Virgin Coconut Oil (Extra Virgin Olive Oil also works)
1 teaspoon Real Vanilla Extract
1 cup Almond, Rice or Hemp Milk
1/4 cup Unsweetened Organic Apple Butter (Unsweetened Organic Apple Sauce can also be used)
1/4 cup Organic Plain Yogurt
1 Egg
1/4 cup Dark Chocolate Chips (Cacoa Nibs can also be used)
4-5 Frozen Bananas
Directions
Step 1 Sift all dry ingredients together in a bowl
Step 2 In another bowl combine all wet ingredient and mix well
Step 3 Fold in the wet mixture into the flour mixture. It should become quite thick.
Step 4 Fold in the bananas. Once the bananas are mixed fold in the chocolate chips
Step 5 Heat the oven to 375F, and bake muffins in a muffin tray for about 20-30min. At 20 min place a toothpick in a muffin, if the toothpick comes out clean, the muffin is done. Once cooked take them out and cover with a cloth this prevents the muffins from deflating.

Just made these. Oh-my-god-delicious! I substituted 1.5 cups almond flour + 2 T. coconut flour (since I’m gluten free 🙂 but kept everything else exactly the same, and I’m now quickly wrapping and freezing these puppies… because 3 muffins in one morning is probably not a good idea. But these are so good, I can’t stop eating them!!!
