Pear & Red Cabbage Soup
Ingredients
- 1 tbsp grass-fed butter or coconut oil
- 1 onion, diced
- 1 small red cabbage, cut into chunks
- 1 garlic cloves, minced
- 2 tsp fennel seeds
- 3/4 cup dry red wine
- 2 pears, cored and chopped
- 5 cups vegetable or chicken broth
- 1 bay leaf
- 1 tsp thyme (dried)
- 1/2 tsp cinnamon
- 1/4 tsp black pepper
- 1/4 tsp sea salt
- juice of 1/2 lemon
- soft goat cheese (for topping)
Directions
Step 1 – On medium heat, melt butter or coconut oil. Next add onion and sea salt. Cooking onions until softened.
Step 2 – Add cabbage and garlic to the pot and cook for about 3-4 minutes.
Step 3 – Add fennel seeds and wine to the pot and simmer for 5 minutes.
Step 4 – Add pears, broth, bay leaf, thyme, cinnamon and pepper, bring to a boil.
Step 5 – Reduce heat to low and simmer for 25 minutes.
Step 6 – Remove bay leaf and stir in lemon juice.
Step 7 – With a hand-held blender (or blender) puree soup.
Step 8 – Pour into bowls and garnish with goat cheese.
