Irish Potato Soup
(Gluten Free)
Ingredients
- 2 large leeks, cleaned and chopped
- 1 large onion, diced
- 4-6 medium potatoes, cleaned and quartered with skins on
- 3 cloves garlic, whole
- 1 1/2 litres organic chicken or vegetable broth
- salt and black pepper
- 3 bay leaves
- organic grass fed butter
Directions
Step 1 – In a large pot melt butter and add leeks, onions, garlic and potatoes. Let vegetable sweat for 5-8 minutes
Step 2 – Add broth and bay leaves. Boil on high for 15 minutes.
Step 3 – Bring heat down to low and simmer for 20- 25 minutes.
Step 4 – Once potatoes are soft, remove bay leaves and in a blender or hand held blender, puree soup until it becomes a creamy consistency.
Step 5 – Add salt and pepper to taste.
Step 6 – Place in a bowl and garnish with cheese and bacon if desired. Serve with Irish Soda Bread.
