Coconut Wild Rice
Gluten Free & Vegan
- 2 cups wild rice
- 2 cups water
- 1 small onion (chopped)
- 1/2 cup mushrooms (chopped)
- 2 1/2 cups coconut milk
- 1/2 teaspoon Sea Salt (or Himalayan Salt)
- 1 teaspoon coconut sugar
- bean sprouts (garnish)
Step 1 – Wash the wild rice for several minutes until the water runs clear.
Step 2 – Place all ingredients (except bean sprouts) in a saucepan.
Step 3 – Bring to boil, cover and reduce heat to low. Simmer until all the water is absorbed and the rice is just beginning to stick to the bottom of the pot.
Step 4 – Turn off the heat and allow the rice to rest in the saucepan for about 5 -10 minutes.
Step 5 – Gently fluff the rice with a fork. Place rice in a bowl and garnish with bean sprouts.
