Chicken Spinach Salad with Pomegranate
Ingredients
- 2-3 chicken breasts
- 4 cups fresh spinach
- 1/4 cup crumbled goat cheese
- 1/4 cup pomegranate seeds
- 1/2 cup olive oil
- 2 garlic cloves, minced
- 1 small shallot, minced
- 1 tbsp fresh thyme, minced
- 3 tbsp fresh basil, minced
- 3 tbsp balsamic vinegar
- sea salt and black pepper
Directions
Step 1 – Preheat oven to 400F
Step 2 – Place chicken breasts in a bowel and sprinkle with sea salt and black pepper. Place chicken breasts on a parchment paper-lined baking sheet and bake until juices run clear.
Step 3 – Cut cooled chicken into 1/2 inch slices
Step 4 – In a small bowl whisk oil, garlic, basil, shallot, thyme, vinegar until combined well.
Step 5 – Toss cooked chicken slices, spinach with dressing and mix well.
Step 6 – Garnish with goat cheese and pomegranate seeds.

Someone once told me black pepper was hard on our kidneys They say to use cayenne pepper instead. Have you ever heard of this? Is there any scientific or medical knowledge of this? Thanks for your research and comments
Great question Dwight. Actually black pepper is beneficial and has side effects on kidneys. Black pepper has a diuretic property, so it can stimulate the kidneys to produce more urine, taking away extra fluid and waste products. However, consuming too much of it if you have kidney issues can increase your risk of kidney stones as black pepper does have high amount of oxalates. If you are worried about the black pepper then stick with the cayenne pepper, that also has many health benefits.
