Beet and Carrot Salad

Gluten Free


  • 2 large carrots, grated
  • 4 medium beets, quartered (you can also cook the beets to make them softer)
  • olive oil
  • apple cider vinegar
  • feta cheese
  • salt
  • black pepper


Step 1 – In a bowl toss carrots, olive oil, vinegar, salt, pepper and feta cheese.

Step 2 – Put carrots on a plate.

Step 3 – Lay quartered beets on top and serve!
