Beet and Carrot Salad
- 2 large carrots, grated
- 4 medium beets, quartered (you can also cook the beets to make them softer)
- olive oil
- apple cider vinegar
- feta cheese
- black pepper
Step 1 – In a bowl toss carrots, olive oil, vinegar, salt, pepper and feta cheese.
Step 2 – Put carrots on a plate.
Step 3 – Lay quartered beets on top and serve!
