Ingredients
Pancakes
- 1 cup rice flour
- 1 cup quinoa flour
- 1/3 cup your favourite unflavoured protein powder (I use whey)
- 1 egg
- 1.5 cups your favourite milk alternative (I use almond)
- 2 tbsp apple butter
- 1/4 tsp baking soda
- 3 tsp vinegar
- coconut oil (for pan)
- maple syrup
Apple Cinnamon
- 1-2 medium apples
- 1 tsp cinnamon
Directions
Step 1 – Place egg, apple butter, milk and vinegar in a bowl and mix well
Step 2 – Add rice and quinoa flour and baking soda to bowl mix until smooth (add more milk if needed)
Step 3 – Cut apple into slices
Step 4 – In a small pot put apple slices, cinnamon and a little water to cover the bottom, mix apples and cinnamon together
Step 5 – On low to medium heat, cover the apples and cook until soft
Step 6 – Add coconut oil to a heated pan (medium heat)
Step 7 – Pour pancake batter to pan and cook until done
Step 8 – Once pancakes are complete, stack them on a plate, top with apple cinnamon mixture and pour a little maple syrup on top. Divine!
I thought nothing could rival my dads Sunday Morning pancakes made with hot milk, butter and bleached white flour that I grew up with. These are just as good!!! SO much better for me – they don’t make my blood sugar go overboard! Thank you Tanya!
