Dia duit, hello here I am in raining Ireland!  Well, the sun has come out a few times, but it’s mostly raining, but it’s all good, I’m having a great time here. It’s great to see my grandparents, my family  and friends.

I’ve been indulging in lots of food, all my old favourites such as boiled bacon, with cabbage, potatoes and parsley sauce, traditional irish breakfasts where everything is fried and many sweet treats and chocolate. Oh, yes. I’m being bad, but it’s oh so good.

Of course I don’t eat this way everyday, and when I vacation I do indulge, but I also know when to stop. However, when I’m back in Ireland I just let loose and have fun. And I have no guilt whatsoever. That’s the key. You’ve got to learn how to remove the guilt. That will be a topic I’ll cover in a future podcast episode. Here’s the thing, it’s only one week, I’m seeing family, I’m enjoying myself now because I know when I get back home, I’ll be getting back into my routine, hard, because I like my routine, I like working out, I like feeling good about myself, so it’s not going to be much of a chore to do so. Now, not everyone is there, some of you feel if you were to let loose for even a day let a lone a week, then it all goes to shit. It’s does take time and it does take conditioning. Again, I cover this topic on another episode.

Once I get back I’ll share with you photos of my adventures and some of the food I’m enjoying!

Theobroma Cacao. What? I’m talking the seduction of chocolate. Why you should be eating it and what you should be looking for in your chocolate.  Theobroma comes from the greek words Theo meaning ‘god’ and broma meaning ‘food’. Which translates to ‘food of the gods’.  How very  fitting.

A few years ago I read a great book called Bitter Chocolate: Investigating the Dark Side of the World’s Most Seductive Sweet. If you want to learn more about the history of chocolate, the big companies that are involved and the chocolate industry is this a fascinating and disgusting look at the industry.

Here are some interesting facts about chocolate:

  • Over 70% of the worlds chocolate comes from the Ivory Coast and Ghana in West Africa.
  • It takes approx 400 cacao beans to make one pound (450g) of chocolate
  • M&M’s were invented in 1941 for soldiers to enjoy without it melting.
  • The average chocolate bar contains 8 insect parts – well, we can say it’s got some protein in it!!
  • And apparently there’s a pill that makes farts smell like chocolate, hmmm I know a few people I could give that to!

So, why should you be eating chocolate. There are many health benefits to a good quality dark chocolate.  And that’s the key. You want the chocolate to be dark, at least 70%, organic and fair trade.  These are all qualities I look for in my chocolate.

Here are just 5 quick benefits of chocolate

Reason #1 – Heart Heath

Organic dark chocolate has been shown to lower blood pressure and lower “bad” LDL cholesterol

Reason #2 – Prevents Diabetes

Dark chocolate has been shown to inhibit blood sugar issues to help prevent diabetes and obesity.

Reason #3 – Eases PMS

Because dark chocolate contains magnesium it’s great for relaxing muscle cramps.  It’s probably one of the reasons women crave chocolate around that special time of  month.

Reason #4 – Anti-Depressant

Dark chocolate contains serotonin and stimulates endorphin production.  How could anyone feel depressed when eating chocolate!

Ever pay attention to your pee? You should and I going to share with you why you should.

Urine is 95 percent water and five percent urea, uric acid, minerals, salts, enzymes, and various substances.

Normal urine is clear and has a straw yellow colour.

Now, there are many things that can change the colour such as foods, medications, supplements but certain health issues or disease can make the colour different.  So, it’s very important to again always look at what you are eliminating.

If your urine is a yellow this is the typical normal colour, sometimes it can be a very bright yellow, this is caused by B vitamins.

Red/pink – could caused by consuming foods such as beets, blueberries, or an iron supplement. If you have not consumed any of those, there could be blood, this could be a UTI (urinary tract infection) or maybe kidney stones.  If you ever see blood go to your doctors immediately, this is very very important.

If you see a deep orange or amber colour you are in a severe dehydration stay, so start drinking water immediately.  But it could also be due to orange foods such as squash or carrots, excess of caffeine, or there could be a more serious matter such as a liver problem or UTI, kidney stones. I would recommend you seeing your doctor if you are seeing this colour even if you are drinking a lot of water.

If it’s colourless – well you are drinking lots of water, you’re well hydrated

If you notice your urine is cloudy, this could be due to a uti, kidney problem, or a metabolic issues, I’d consult your doctor especially if you are also experience pain or burning when you urinate

Let’s talk smell quickly.

Urine typically doesn’t have a strong smell, but if you notice a pungent smell like ammonia, this could be a UTI or kidney stones, this could also be due to eating a lot of protein like meat and eggs.

Does it have a sweet or fruity smell – this could be a sign of diabetes. You to your doctor to get checked out right away.

Your body is always talking to you, it will always give you signs and signals that something is out of balance, it’s your job to pay attention.

Next time you pee, take a good look at it!

Broccoli and Mushroom Quiche

Ingredients:

  • store bought pie crust (or make your own)
  • 1 head of broccoli, florets are sliced
  • 2 cups of mushrooms (crimini, shiitake etc.)
  • 2 garlic cloves, minced
  • 5 eggs
  • 1/4 cup almond milk, or other milk you desire ie. coconut, hemp, etc.
  • 1/3 cup shredded parmesan cheese
  • 2 tbsp butter
  • sea salt and black pepper

Directions:

Step 1 – Preheat the oven to 425˚F. Place broccoli florets in boiling water with a little salt and cook until just tender. Drain and set aside

Step 2 – Melt butter in a frying pan, add mushrooms and garlic and sauté until mushrooms are soft and liquid has evaporated.

Step 3 – Whisk together eggs and almond milk with a little salt and pepper.

Step 4 – Pour egg mixture into pie crust. Arrange broccoli on top then the mushrooms.

Step 5 – Bake for 30-35 minutes.

Step 6 – Sprinkle parmesan cheese on top and place back into the oven until cheese has melted.

Step 7 – Let cool, slice and serve!

Salmon with Mushrooms and Bok Choy

Ingredients:

  • 4 salmon fillets
  • 2 heads bok choy, quartered lengthwise
  • 2 cups shiitake mushrooms, sliced
  • 1 tbsp coconut oil
  • 1 tbsp soy sauce
  • 1/2 tbsp mirin sauce or rice vinegar
  • 2 garlic cloves, minced
  • sea salt and black pepper

Directions:

Step 1 – Preheat oven to 400˚F. Put oil, soy sauce, mirin sauce, ginger and garlic in a bowl and mix well. Season with salt and pepper.

Step 2 – Put the salmon fillets, bok choy and mushrooms in a roasting pan, drizzle the oil mixture over the salmon and combine well.

Step 3 – Put into the oven and roast for 20-25 minutes or until the salmon is fully cooked.

Step 4 – Serve with rice, quinoa or buckwheat noodles.

Ingredients

  • 1 pot of boiling salted water
  • 3-5 bunches of broccoli
  • 2-3 cloves of garlic
  • 1 tbsp of goat cheese
  • handful of chopped walnuts

Directions

Step 1 – Put broccoli into boiling water and cook until bright green (1-2 minutes).

Step 2 – Remove broccoli and place in a blender with garlic cloves, pour in about 1 cup of water (that the broccoli was cooked in).  Blend until smooth, add more water (if necessary) until desired consistency.

Step 3 – Pour into a bowl and top with goat cheese and walnuts.

Ingredients

  • 2-3 chicken breasts
  • 4 cups fresh spinach
  • 1/4 cup crumbled goat cheese
  • 1/4 cup pomegranate seeds
  • 1/2 cup olive oil
  • 2 garlic cloves, minced
  • 1 small shallot, minced
  • 1 tbsp fresh thyme, minced
  • 3 tbsp fresh basil, minced
  • 3 tbsp balsamic vinegar
  • sea salt and black pepper

Directions

Step 1 – Preheat oven to 400F

Step 2 – Place chicken breasts in a bowel and sprinkle with sea salt and black pepper. Place chicken breasts on a parchment paper-lined baking sheet and bake until juices run clear.

Step 3 – Cut cooled chicken into 1/2 inch slices

Step 4 – In a small bowl whisk oil, garlic, basil, shallot, thyme, vinegar until combined well.

Step 5 – Toss cooked chicken slices, spinach with dressing and mix well.

Step 6 – Garnish with goat cheese and pomegranate seeds.
