Ingredients

  • 1 medium apple, thinly sliced
  • 1 medium raw beet, thinly sliced
  • 1 celery stalk, thinly sliced
  • 3 inches cucumber, thinly sliced
  • handful of almonds, chopped
  • handful of dried cranberries
  • 1 tbsp apple cider vinegar
  • 3 tbsp olive oil
  • salt and pepper

Directions

Step 1 – Place all veggies on a plate mixed together

Step 2 – Sprinkle with almonds and cranberries

Step 3 – In a glass jar mix apple cider vinegar and olive oil with salt and pepper together and mix well.

Step 4 – Pour dressing over salad and enjoy!

Ingredients

  • 1 cup of cooked quinoa
  • 1/4 cup shredded coconut
  • 2 tbsp chia seeds
  • 2 tbsp goji berries
  • 1 cup of your favourite milk ie. almond, coconut, hemp
  • 1/4 cup chopped fresh mango
  • ground pumpkin seeds
  • hemp seeds

Directions

Step 1 – Place quinoa, shredded coconut, chia seeds, goji berries and milk in a pot and bring to a boil

Step 2 – Turn down heat to low and simmer for 5 minutes

Step 3 – Put quinoa mixture into a bowl and top with ground pumpkin seeds, hemp seeds and mango

 Base Ingredients:

  • 3/4 cup soaked dates (pitted)
  • 1 cup almonds
  • 1 tsp coconut oil (melted)

Caramel Ingredients:

  • 1 cup soaked dates (pitted)
  • 1 cup raw cashews (soaked)
  • 1/2 cup coconut oil (melted)
  • 1 1/2 tbsp smooth tahini
  • 1/2 cup pure maple syrup
  • 1/3 cup filtered water

Top Chocolate Layer Ingredients:

  • 1/4 cup coconut oil (melted)
  • 1/4 cup raw cacao powder
  • 1/4 cup pure maple syrup

Base Directions: 

  1. Place almonds in food processor until it’s the consistency you prefer (fine crumbs, or bigger chunks of almonds)
  2. Add dates and coconut oil in a food processor with the almonds, it should become a sticky mixture.
  3. Press mixture into a parchment paper lined square dish press it down to form the base.
  4. Place it in the freezer.

Caramel Directions: 

  1. Put dates, coconut oil, tahini, maple syrup, cashews and water into a blender and blend until smooth (you may need a little extra water to help blend it but try and keep it to a minimum).
  2. Spread caramel mixture on top of the base layer and return it to the freezer to set.

Top Chocolate Directions:

  1. Add the coconut oil, maple syrup and cacao to a small saucepan on really low heat and stir until it is combined and resembles chocolate sauce.
  2. Spread the chocolate sauce on top of the caramel filling  (caramel layer must be set before you do this).
  3. Place it back into the freezer for an hour and then remove it from the dish, cut into diamonds and store it in an airtight container in the fridge.

20 Ways to Use Apple Cider Vinegar

For hundreds of years people have been using apple cider vinegar as both a food and a medicine.  Hippocrates, the father of modern medicine, and the guy who said “let food be thy medicine and medicine be thy food” and many other health experts have used vinegar and vinegar mixed with honey, as a healing and energizing tonic since 400BC.

But apple cider vinegar is not just for consuming, there are many many ways to use this amazing vinegar in your every day routine.

There is one thing you should be aware of before you purchase your bottle of ACV.  Not all apple cider vinegar brands are the same.  There are many commercial brands that have been pasteurized, filtered, refined or distilled in order to make the product look good.  Unfortunately, this destroys much of the health benefits that ACV provides.  The best type of ACV to purchase is one that has been cold pressed, made from organic apples, is not pasteurized and most important contains the “mother of vinegar”.  You’ll see this displayed on the front of the bottle usually as “with The Mother”. The “mother of vinegar” is a natural gelatinous substance formed during the last fermentation step.  ACV undergoes two fermentation processes where it produces enzymes, bacteria and life giving nutrients that make apple cider vinegar the powerhouse it is.

Food

  • Fruit and vegetable wash – add a tsp of ACV to a bowl of water with your veggies and let soak for at least 5 min.
  • Salad dressing – mix with olive oil, add a little salt and pepper and you’ve got a quick, easy and health salad dressing.

Health & Beauty

  • Use it on your hair and scalp. 1/4 cup of ACV mixed with 2 cups of water used as a rinse after you shampoo and condition closes the hairs cuticle, adds shine, clarifies the hair and scalp  and helps with the pH balance of the scalp.
  • Skin toner for blemishes – 3 parts water to 1 part ACV
  • 1 tablespoon of ACV mixed in 4 ounces of purified water after a meal has been used as a natural  remedy for heartburn and as a replacement for toxic heartburn medications.
  • Aids digestion
  • Apple Cider Vinegar helps to break down fats so that your body can use them rather than store them. For this reason, many diets include ACV in the regimen.
  • Helps control weight
  • Detox with it. Again, adding 2 tablespoons ACV to 8 oz. of water and drinking it can remove excess toxins and sludge. It’s best to drink it in the morning before you eat or drink anything.
  • Soothe sunburns or muscle pains. Add a few cups of ACV to your bath water.
  • Helps to lower high cholesterol and high blood pressure
  • Used to ease arthritis, stiff joints, and gout.
  • Soak away aching muscles. If you’ve pulled a tendon or are just feeling rundown, add 2 cups apple cider vinegar to your bathwater. Mixing peppermint in makes it even fresher.
  • Get rid of age or sun spots. Pour full-strength apple cider vinegar onto a cotton ball and apply it to the spots for 10 minutes at least twice a day, and you should see the spots fade or disappear within a few weeks.

Home & Garden

  • Use it to wash windows and leave a streak free shine and clean scent
  • Fruit fly solution – put half a cup of apple cider vinegar in a glass jar. Place Saran Wrap over the top of a jar, put a rubber band/tape around it to make it tight. Take a toothpick and pock six small holes in the saran wrap. Place in the area you’re having the problem.
  • Great to use with baking soda to remove stubborn stains on pots and pans.
  • Order remover – fill a small bowl or saucer with apple cider vinegar and placing it in the room where the odor is…. within a few days your room will smell fresh and clean.
  • Jewelry cleaner – add a little baking soda and scrum mixture with a tooth brush to make your jewels shine!

Pets

  • Rub apple cider vinegar onto your pet’s skin. Add a little bit of apple cider vinegar to their water. Spray apple cider vinegar, diluted 50 percent with water, onto your pets and onto your furniture to repel the presence of fleas.

Ingredients

  • 1 medium onion, sliced
  • 1 yellow pepper, sliced
  • 1 red pepper, sliced
  • 1 cup broccoli, chopped
  • 2 cups kale, chopped
  • coconut oil
  • sesame oil
  • soy sauce

Directions

Step 1 – In a wok or large pan heat 1 tbsp coconut oil.

Step 2 – Add all veggies except for kale and cook until tender but still has a little crunch

Step 3 – Add 1 tbsp sesame oil and 1-2 tbsp soy sauce and mix well.

Step 4 – Add kale and mix well until the kale becomes soft.

Step 5 – Serve on rice, quinoa or pasta.

Cut the crap, keep it real is a simple conscious way to think about your skin and its care. Your skin is your largest organ and the body’s first line of defence. The skin requires internal and external nourishment and protection to function optimally. There is plenty of “crap” to cut when keeping it real with beauty ritual. First, there is diet. Many skin conditions are directly related to the digestive system. Poor nutrient absorption is often the root cause of pre-mature aging and acne. These two conditions are the most common culprits that lead to poor self image where the skin is concerned. A diet of processed food, sugar and dairy cause inflammation that can impair digestion. Cutting down or eliminating these types of food will encourage healthy functioning skin. Getting enough sleep and regular movement will also aid in your quest for glowing skin.

As an aesthetician I’ve been asked many times about the effectiveness of topical skin care products and treatments. Do they really work? The answer is yes and no. It is estimated that women are exposed to over 100 toxic ingredients before leaving the house each morning. Mainstream toxic laden products will not produce the glowing skin you’ve been wishing for. The alternative is selecting products and treatments that are made with farmed ingredients that are processed at low or no heat to protect their efficacy. I choose Eminence Organics, a company that has been utilizing sustainable farming and green practices to produce effective, natural, organic and biodynamic products. I like to simplify this by saying it’s like a raw food diet for your face. Understanding the origin of the ingredients in your products is important.

Lastly cut out comparing yourself to other women. We are unique. Don’t fill your head with celebrity culture and mainstream attitudes about what women should be or look like. Live your life, be yourself, cut the crap and keep it real. And for the love of all that is good, wear non toxic sunscreen.

Irish Potato Soup

 (Gluten Free)

Ingredients

  • 2 large leeks, cleaned and chopped
  • 1 large onion, diced
  • 4-6 medium potatoes, cleaned and quartered with skins on
  • 3 cloves garlic, whole
  • 1 1/2 litres organic chicken or vegetable broth
  • salt and black pepper
  • 3 bay leaves
  • organic grass fed butter

Directions

Step 1 – In a large pot melt butter and add leeks, onions, garlic and potatoes. Let vegetable sweat for 5-8 minutes

Step 2 – Add broth and bay leaves. Boil on high for 15 minutes.

Step 3 – Bring heat down to low and simmer for 20- 25 minutes.

Step 4 – Once potatoes are soft, remove bay leaves and in a blender or hand held blender, puree soup until it becomes a creamy consistency.

Step 5 – Add salt and pepper to taste.

Step 6 – Place in a bowl and garnish with cheese and bacon if desired. Serve with Irish Soda Bread.
