Raw Mango Cheesecake

Gluten Free & Vegan

Ingredients

Base

  • 1 cup ground almonds (or almond flour)
  • 1/2 cup coconut flour
  • 1/2 cup shredded coconut
  • 1/2 cup soaked dates

Filling

  • Coconut cream (see note below)
  • 1 cup frozen mango
  • 1 cup soaked cashews
  • 1 tbsp date water (use the water the dates were soaked in)

Topping

  • 1 cup mango (if frozen, then thaw before use)
  • 1 tbsp chia seeds
  • 2 tbsp of coconut water (see not below)

Directions

Base

Step 1 – Place all ingredients into a food processor and mix until all ingredients are stuck together but not into a big clump.

Step 2 – Coat the bottom of a square or round baking dish with coconut oil.

Step 3 – Remove ingredients from food processor and place into baking dish, cover the dish with the nut mixture, pressing down to cover the bottom completely.

Step 4 – Put into the freezer.

Filling

Step 1 – Put all ingredients into a blender and blend until it becomes a thick smooth texture.

Step 2 – Remove base from the freezer.

Step 3 – Pour filling over the base, making sure it’s evenly covered.

Step 4 – Place back into freezer until it’s solidified (at least one hour or overnight)

Topping

Step 1 – Put all ingredients into a blender and pulse gently until it’s a thick mixture.

Step 2 – Place in a bowl or jar and put in the fridge until it becomes thicker (the chia seeds gelatinize making the topping thicker like a jam)

Once the cheesecake has settled, take out from the freezer.  Let it thaw for roughly 5 minutes before cutting into slices.  Top with your mango topping and enjoy!

Note: Coconut Cream

Step 1 – Place a can of coconut milk into the fridge and 2-3 days.  The cream will settle on the top and the water on the bottom.

Step 2 – Turn the can upside down and open

Step 3 – Scoop out the coconut cream

Step 4 – Save the coconut water on the bottom for the mango topping and for future cooking

Ingredients

Pancakes

  • 1 cup rice flour
  • 1 cup quinoa flour
  • 1/3 cup your favourite unflavoured protein powder (I use whey)
  • 1 egg
  • 1.5 cups your favourite milk alternative (I use almond)
  • 2 tbsp apple butter
  • 1/4 tsp baking soda
  • 3 tsp vinegar
  • coconut oil (for pan)
  • maple syrup

Apple Cinnamon

  • 1-2 medium apples
  • 1 tsp cinnamon

Directions

Step 1 – Place egg, apple butter, milk and vinegar in a bowl and mix well

Step 2 – Add rice and quinoa flour and baking soda to bowl mix until smooth (add more milk if needed)

Step 3 – Cut apple into slices

Step 4 – In a small pot put apple slices, cinnamon and a little water to cover the bottom, mix apples and cinnamon together

Step 5 – On low to medium heat, cover the apples and cook until soft

Step 6 – Add coconut oil to a heated pan (medium heat)

Step 7 – Pour pancake batter to pan and cook until done

Step 8 – Once pancakes are complete, stack them on a plate, top with apple cinnamon mixture and pour a little maple syrup on top. Divine!

Ingredients

  • 4-5 large carrots (chopped)
  • 2 medium beets (chopped)
  • 1 large onion (chopped)
  • 1-2 inches ginger (chopped)
  • 3 cloves garlic
  • 2 litres chicken or vegetable stock
  • 1 tsp cumin
  • 1 tsp red pepper flakes
  • 1/2 tsp cayenne pepper powder
  • 1 tsp turmeric
  • goat cheese (to garnish)

Directions

Step 1 – Pour your preferred stock into a pot, leave about 100-200ml of stock aside for later

Step 2 – Place carrots, onion , beets, garlic and ginger in the pot with stock and bring to a boil

Step 3 – Once boiled turn down the heat and let the vegetables simmer for 20-30 minutes or until they become soft

Step 4 – With a hand-held blender,  blend pot until vegetables and stock become smooth

Step 5 – Add remaining stock, cumin, red pepper flakes, turmeric, and cayenne and mix well

Step 6 – Taste test, add cayenne is you want more heat

Step 7 – Pour into bowl, top with a little goat cheese to garnish

Gluten Free & Vegan (optional)

Ingredients

  • 6-8 large carrots (chopped)
  • 1 large onion (chopped)
  • 1-2 inches ginger (chopped)
  • 2 litres chicken or vegetable stock
  • 1 tsp cumin
  • 1 tsp cardamom

Directions

Step 1 – Pour your preferred stock into a pot, leave about 100-200ml of stock aside for later

Step 2 – Place carrots, onion and ginger in the pot with stock and bring to a boil

Step 3 – Once boiled turn down the heat and let the vegetables simmer for 20-30 minutes or until they become soft

Step 4 – With a hand-held blender,  blend pot until vegetables and stock become smooth

Step 5 – Add remaining stock, cumin and cardamom and mix well

Step 6 – Taste test, add more cumin and cardamom if needed.

The Art of Letting Go

This week I am talking about the art of letting go, I’m going solo this week so I’ll try to entertain you as much as I can.  It’s a new year, so it’s time for some resolutions right?

As I was thinking about this episode and how I wanted to start the new year.  I was thinking about doing something on goal setting or new years resolutions, but then I thought, no, that’s boring and has been done so many times and do any of us really listen?  Do new years resolutions really work?  I think they do, but you’ve got to be in the right mindset.  So, I started thinking about why some of us make these resolutions with ourselves and don’t actually complete them.  There are a number of reasons for this, but one idea that came to mind was our past. Our past actions, failures, past thoughts or ideas.

Are we unable to fulfill theses resolutions because we’ve already told ourselves we can’t (subconsciously) because in the past we didn’t.  Are we still hanging on to the past and what has happened (or didn’t happen).  Are we unable to let go?

My thought was if we can let go of the past, let go of the should’s, let go of the could, let go of other people’s opinions, ideas and beliefs about ourselves then maybe we can move forward, remove the excuses, cut the crap and make shit happen for ourselves.

I’m going to give you 3 things to think about in this episode.  I want to keep it as simple as possible and not over complicate this too much.  But this is a big topic, so understand I’m just scratching the surface.

Beef Tenderloin dusted with Cacao

Ingredients

  • 1 – 2 lbs beef tenderloin (trimmed of fat if any)
  • 3 tbsp coconut oil, butter or ghee
  • 1-2 tsp raw cacao powder
  • salt and black pepper

Directions

Step 1 – Pat dry the tenderloin with paper towels

Step 2 – Rub 2 tsp of your preferred oil

Step 3 – Rub on raw cacao powder

Step 4 – Season generously with salt and pepper

Step 5 – Heat a large pan or skillet on medium high heat and add remaining oil

Step 6 – Sear all sides of the beef tenderloin until nicely browned (but not burned)

Step 7 – Place beef into a roasting dish and roast at 350˚F

Step 8 – Once the internal temperature of beef has reached 120˚F, remove from oven and let sit for 15 minutes

Step 9 – Cut into slices.

Try this recipe with a red wine sauce or get more crazy and try it with a raspberry sauce.  Serve over a salad or with sweet potatoes and broccoli.

Gluten Free & Vegan

Ingredients:

  • 2 cups wild rice
  • 2 cups water
  • 1 small onion (chopped)
  • 1/2 cup mushrooms (chopped)
  • 2 1/2 cups coconut milk
  • 1/2 teaspoon Sea Salt (or Himalayan Salt)
  • 1 teaspoon coconut sugar
  • bean sprouts (garnish)

Directions:

Step 1 – Wash the wild rice for several minutes until the water runs clear.

Step 2 – Place all ingredients (except bean sprouts) in a saucepan.

Step 3 – Bring to boil, cover and reduce heat to low. Simmer until all the water is absorbed and the rice is just beginning to stick to the bottom of the pot.

Step 4 – Turn off the heat and allow the rice to rest in the saucepan for about 5 -10 minutes.

Step 5 – Gently fluff the rice with a fork. Place rice in a bowl and garnish with bean sprouts.
